Here it comes to coconut milk supplemented with various enzymes, as well as thickeners (modified starch tapioca, corn or potato, guar gum, pectin...). In effect, coconut milk does not contain proteins needed for good coagulation of the product. Note, some yogurts are made with coconut milk and others with a mixture of milk and coconut water. These are a little less fat.

In the mouth, it is creamiest and sweetest, somewhat as a Greek yogurt which is enriched with cream, with a delicious little notes of coconut. -Side composition, it is richer in lipids (9 to 18% according to versions, or 2 to 4 times more than a whole milk yogurt!) and less rich in protein (2% on average, or 2 times less). If coconut milk contains much less calcium, important for the bones, as cow's milk, it presents instead amore interesting content of magnesium, anti-stress, potassium, alkalizing, iron, anti-fatigue, selenium and manganese, antioxidants...
What are its nutritional advantages?
"It does not contain lactose, which is interesting for those who are intolerant or whohave irritable bowel, note the Florence Foucaut dietician. "In addition, it contains nocholesterol and fat, medium-chain fatty acids, are not stored but used directly to provide energy. Finally, as a classic yogurt, it contains "good bacteria" (if it was fermented with lactic acid bacteria good) that promote the proper functioning of the intestinal flora involved in digestion and immunity.
